Alain Passard collages at the Musée Nissim de Camondo
The 3 Michelin starred veggie chef Alain Passard of the restaurant Arpège presents a series of original collages prepared for his just-published first recipe book, Collages & Recettes (Alternatives). The delicate works are displayed on the walls of the 19th-century kitchen, dining room and butleries of the charming Nissim de Camondo museum. Known for his unique cooking style dedicated entirely to vegetables, Passard chose to illustrate the 48 seasonal recipes of his book with collages he made himself, finding them more mysterious, intimate and subtle than photographs. The 40 tonnes of legumes he prepares each year in his kitchen are all sourced from his own, organic, gardens, which contain over 450 varieties of fruits, vegetables and herbs.
