Melbourne barista Chris has set up the city’s newest espresso bar, on the Carreau du Temple between République and Rue de Bretagne. Fondation Café is a stripped back affair, selling bien sûr excellent coffee prepared with beans roasted by new Parisian roastery Belleville, and prepared on a space-age Dutch Kees van der Westen machine. There’s also a short menu of tasty home-made baked goods. In summer, the cosy bolthole opens entirely on to the street and a slew of outdoor tables. Open from 8am, 7/7, it’s the perfect pitstop after a browse at nextdoor bookshop/ gallery 0FR.
