HAÏ KAÏ
Three friends have set up this beautiful new ‘maison’ on the Canal St Martin. Open from early to late, it’s a light-filled, roomy place to drop by for breakfast, lunch, afternoon tea, an aperitif, or dinner. After stints at the Bristol, the Meurice, L’Ami Jean and the Broken Arm, the inspired young chef Amélie Darvas is turning out a fresh, precise and creative menu each day (19€/ 22€) from her bustling open kitchen. They’re using quality – often organic or biodynamic – ingredients sourced directly from small producers, the fish is line caught… Gaby Benicio and Elsa Kikoïne are on the floor, sharing their recommendations for the right wine pairing, or cake to go with your Coutume coffee. The name Haï Kaï refers to the Japanese poetry form: simple, precise and channeling the moment.
