The Kale Project
American expat Kristen Beddard has been on a mission to integrate super-veggie kale into the Paris food scene since moving here in September 2011. Like many expats, she couldn’t believe kale was not grown, sold or eaten in France. Tonight marks a milestone for the kale project with the first locally grown crop of the vegetable on the menu – in Kristen’s Kale Salad created by Braden Perkins – at Verjus wine bar.
