The Candelaria/ Glass crew strike again with this new bar in the Northern Marais, le Mary Celeste, named after the famous “ghost ship.” Cutting through the streets of the Northern Marais like the prow of a ship, Mary Celeste the bar specialises in a briny menu of oysters from around the world (2-4€ each), plus there’s other exotic bar snacks including tacos (7€) or steamed Chinese buns. Fill in your menu then pass your order to the waiter, and grab a napkin and cutlery from the tin on your table. The big central bar seats more than 20, from here you can watch Carlo and the other maestros mixing up tasty cocktails (and there’s Brooklyn Brews on tap too). A vintage turntable spins a vintage playlist of 80s rock classics. Just the music for nightsurfing the Paris seas.

The chef de cuisine at Le Mary Celeste is Canadian Haan Palcu-Chang who hails from Verre Vole in Paris and Kokkeriet in Copenhagen. His name as much as his signature dishes are a fusion of Western and Asian elements. Everything is made lovingly from scratch, including the slow-grilled beef jerky, fast becoming a favourite of this watering hole. Keep an eye on this rising talent!
